INGREDIENTS

– 6 large eggs – 1 cups white sugar – 1 ¼ cups heavy whipping cream – 1 ¼ cups mascarpone cheese – 20 ladyfingers – ¾ cups coffee – ¾ cups kahlua – ½ cup cocoa powder or dark chocolate slab

BEATING THE EGGS

In a stainless steel bowl combine egg yolks and sugar to whisk over a bain-marie.

BEAT UNTIL THICK

Whisk continuously until the egg mixture becomes thick and fluffy.

ADDING THE MASCARPONE

Add the mascarpone to the whipped egg yolks and mix well.

ADDING THE WIPPED CREAM

Gently fold the whipped cream into the mascarpone mixture and set aside

To keep the texture light and airy make sure you execute this step very carefully.

SOAKING THE LADYFINGERS

Dip the ladyfingers in the coffee-kahlua mixture no longer than 2 seconds.

ASSEMBLING THE TIRAMISU

Arrange half of the ladyfingers on the bottom of a dish.

Cover the ladyfingers with half the mascarpone mixture.

REPEAT THE LAYERS

Repeat the process with another layer of ladyfingers.

REPEAT THE LAYERS

Add the final layer of mascarpone mixture and keep in the fridge to set for 6 six hours.

Remove from the fridge and dust with cocoa powder.
