The Zopf is a type of bread made with white flour, milk, eggs, butter and yeast.

INGREDIENTS

– 4 cups plain flour – 0.3 oz dry yeast  – ½ cup full fat milk – ⅓ cup sugar – 2 eggs free range – 1 tsp vanilla – 1 pinch of salt – 3.5 oz butter – ½ cups raisins – 3.5 oz icing sugar – 1 tbsp lemon juice – 2 tbsp water – 0.7 oz almonds

Combine flour with eggs, warm milk, yeast, sugar, salt and vanilla essence.

Use an electric dough hook and knead the dough at low speed

Increase the speed and add the soft butter cubes one by one.

Knead by hand for about 5 more minutes and place it back in the bowl.

Cover with a damp cloth and leave to rise in a warm spot for 45 minutes.

Knead the dough once again and portion into 3 even balls.

With your palms roll the dough into strands.

Fold the 3 strands into a braid.

Place the finished braid on a baking tray lined with baking paper.

Let rise for another 45 minutes at a warm spot and then bake at 350 F for 25 minutes.

Brush the braid with the lemon and sugar mixture...

...and sprinkle with toasted shaved almonds.

Serve for breakfast or as an afternoon snack.
