Szechuan pepper also known as Sichuan pepper or prickly ash is a spice used in Chinese cooking.

INGREDIENTS

– 3 red chilies – 1 small brown onion – 2 garlic cloves – 1 tsp ginger sliced – 2 tbsp sichuan  – 1 tsp five spice powder – 1 tsp soy sauce – 1 tbsp sesame oil – 1⅓ cups canola oil – sea salt to taste

GRINDING THE PEPPER

Grind the sichuan peppers with a mortar and pestle.

CUTTING THE VEGETABLES

Peel and cut the onion, garlic and ginger into slices.

CUTTING THE CHILIES

Wash and cut the chilies into larger slices.

COOKING THE CHILIES & VEG

Combine the chili pepper, onion, garlic and ginger in a wide pan and add the oil.

ADD THE SICHUAN PEPPERS AND FIVE SPICE POWDER

 COOK FOR 12-15 MINUTES

Cook over slow heat until the onion and garlic start browning.

 ADD REMAINING INGREDIENTS

Add the soya sauce and sesame oil.

 THE ONION AND GARLIC SHOULD BE NICELY TOASTED.

 MIX FOR 1-2 MINUTES IN A FOOD PROCESSOR.

 Keep the chili oil chunky to get a crunchy texture.
